One of my favourite soups is a pancake soup.
In the region where I come (Schwaben) from it is called
“Flädle suppe”.
After pancake day I had some pancakes left so what to do with them?
of course…
Cut the pancakes in small strips
Make a bouillon and add the Flädle:
Voila
Yummy
Simple and delicious!
I don’t usually have any leftover pancakes but if I ever do this is an excellent idea.
Exactly we do not want to waste such delicacy! 🙂

may I ask what the broth is made from?
I just used instant Swiss bouillon. But originally is made of vegetables, bones, meat, poultry. Put it all in a pot with cold water and boil it for a while. The water takes all goodness out of the veg etc, then take all the stuff out and season it and it is a lovely broth.

That does look very delicious Ute and great foodie shots. Clever to do that with left-over pancakes. In this house it won’t happen though. Hubby is the pancake baker here and the minute it’s done, it’s all finished. LOL!

Nice idea, in Germany we eat it with parsley and seasoned. Here in England they eat it sweet with sugar and lemon juice. I like both really!
Sounds delicious. We eat it with cinnamon sugar. No lemon juice, but it makes me wonder how that will taste. 😀
